⁃ Scallops smoked with thyme and rosemary, Spicy butternut velouté, Butter clams and asparagus.

Dish:
⁃ Court-bouillon-cooked langoustine tail, SunSet-style potato trilogy fondant and Yuzu hollandaise cream.

Dessert :
⁃ Melt-in-your-mouth apple mille-feuilles, caramel citrus gel, tonka bean Chantilly and salted butter caramel coulis.
